Mom’s All Purpose Dry Mix

This recipe is the best ever That I have tried for waffles or pancakes, My Mom would always whip up a huge batch of Pancakes for every New Years Christmas and Thanksgiving Day, we would always devour the scrumptious delights. When I got a waffle iron my mom suggested I try the mis in my latest gadget, I was thrilled with the fluffy and yummy results! 🙂

A helpful list of everything you’ll need for this recipe

  • 2 Cups all-purpose Flour
  • Tip: You can swap one cup of the flour for whole wheat flour for added nutrition!
  • 1 and 1/2 tsp baking Powder
  • 1 tsp baking Soda
  • 1/4 tsp salt
  • 1 tbsp sugar (optional, honey can be substituted in the wet mix, or the sweetener can be excluded all together
  • 2 Eggs
  • 1 tsp Vanilla Extraxt
  • 2 cups milk, any kind, dairy or non-dairy and any percentage, or water
  • Tip: For those who need to avoid dairy, add 1/2 cup alternative liquid at a time as sometimes less is needed then of milk
  • 2 tbsp olive oil
  • Vegetable oil, butter or margine or any other oil you prefer will sub-in nicely
  • Addition oil or butter or cooking spray for greasing the Pancake pan or griddle or Your Waffle Iron
  • A Brush, if you are not using Cooking spray, to grease the cooking vessel
  • Blueberries
  • Strawberries
  • Whipped Cream
  • A large bowl
  • A small bowl
  • A wooden Spoon or Sturdy fork for mixing
  • Measuring Spoons
  • Measuring Cups
  • A Liquid Measuring Cup
  • A Pan for Pancake griddling or a Waffle Iron
  • A Metal or platic Spatula that’s large enough for fliping pancakes
  • A wooden fork or knife for removing Waffles from the waffle iron

In the Large Bowl, mix together all the dry mix ingredients, stir well. In the small bowl, mix together all of the wet ingredients, except for the oil, mix one 1/2 cup at a time into the dry ingredients, the mixture should be smooth and pourable, but not at all runny. Once mixed together, add in oil and stir just until the oil is combined.

Don’t preheat the Waffle Iron until the batter s mixed, letting the batter sit a little will only make the waffles even better and that way, you can keep an eye on that iron so it doesn’t over heat 🙂 This tip also works for the pan if you are Making pancakes

Once the iron is preheated according to the manufactures instructions, Spray or Brush with the plates lightly, just so the waffle will get golden, and will not stick. Pour approximately 2/3 of a cup of batter in for most standard size waffle makes, or whatever amount is recommend by the instruction manual, for a very even waffle gently spread the batter almost to the edges using a wooden spoon. Cook Waffle according to the specification in your owner manual. Continue process until batter is used up.

Add oil or butter to pan, once Butter (or margarine) is melter and bubbly, the pan is ready, and once Oil (or cooking spray that was sprayed into the pan) is slick when pan is swirled and it has a nice shine to it, the pan is ready. Using a 1/2 cup measurer, spacing pancakes one inch apart, pour batter into the pre heated greased pan. Cook the pancakes on the first side until there are bubbles forming over most of the top surface of the pancake, flip over using a spatula, and then cook about a minute on the second sit, or until cooked through, then remove from the skillet. Proceed to prepare the rest of the batter in the same way, until you are done

Serve the Waffles and Pancakes with the blueberries, the Strawberries, or the Whipped Cream, Or With all Three! Enjoyed with a loved one, and when served warm and fresh from the kitchen 🙂
